Ingredients: -1 tbsp. olive oil -1 onion, chopped -3 cloves garlic, minced -3 cups chicken broth -2 cups half and half -1 (10 oz) package frozen chopped spinach, thawed and squeezed dry -1/2 cup grated Parmesan cheese -Salt and pepper to taste

Instructions: 1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. 2. Add the chicken broth and bring to a boil. reduce the heat to medium low and simmer for 10 minutes. 3. Add the half and half and spinach and cook until heated through, about 5 minutes. Stir in the Parmesan cheese and season with salt and pepper to taste. Serve hot.
