Ingredients:

-1 lb. fresh spinach, washed and chopped -1/2 cup butter -1/2 cup flour -3 cups chicken broth -1 cup milk -Salt and pepper to taste

Instructions:

  1. In a large pot, melt the butter over medium heat. Stir in the flour and continue to stir until the mixture is smooth.
  2. Slowly add the chicken broth and milk, whisking until well combined. Bring the soup to a simmer and cook for 5 minutes, or until thickened.
  3. Add the spinach and cook for 2 minutes, or until wilted. Season with salt and pepper to taste. Serve hot!
